Paleo Pork Chops with Mushrooms
Paleo Pork Chops Recipe
4 bone-in center cut pork chops
Salt and pepper
1 T olive oil
1 onion, sliced
3 cloves garlic, minced
8 oz white button mushrooms
8 oz baby bella mushrooms (crimini)
½ t dried rosemary
½ c chicken broth or stock
1. Sprinkle pork chops with salt and pepper. Heat the oil in a large pan over medium-high heat. Add pork chops and cook for 3 minutes on each side; remove from pan and set aside.
2. Add the onions and garlic to the pan. Reduce the heat to medium and cook until softened, stirring occasionally, until softened, about 5 minutes. Add the mushrooms and the rosemary. Cook until the mushrooms are tender, about 7 minutes, stirring occasionally.
3. Add the broth and heat to simmering. Add the pork. Cover, reduce heat and simmer for 8 minutes or until pork is cooked through. Salt and pepper to taste. Serve pork topped with mushroom mixture.
